Wollongong chef Billy Fox has out-cooked a national field to be named best in Australia during the 2018 Nestlé Golden Chef’s Hat Award competition at Fine Food Australia.

Mr Fox and his team mate were crowned national champions in the national competition for young chefs. He and Matt Wills, of Ryde, represented TAFE NSW after winning the state competition. They took out the overall prize and have earned themselves a culinary trip to Italy after winning gold medals for their main and dessert courses and silver for their entree course.
“We worked very hard for a very long time for this,” Mr Fox said.
Their main course was Australian beef with mushroom crusted porterhouse and Korean BBQ oxtail with orange and maple carrot, pea tart and scented sauce.
It was more than a case of third time lucky for Mr Fox whose skills in the kitchen has made him a national finalist at the 2018 Nestlé Golden Chef’s Hat Award for each of the last three years.
Fine Food Australia is recognised as Australia’s largest professional food show.

Both Mr Fox and Mr Wills both studied Certificate III in Commercial Cookery at TAFE NSW Ryde and TAFE NSW Wollongong.
