The Illawarra based not-for-profit organisation is creating a bread structure for a third year but this weekend's fortress will be the largest.
Hidden Harvest's goal is to create a wall of bread that would otherwise be going to waste. They want the structure to be so striking it captures the attention and imagination of festival goers and sparks conversation around food waste.
Volunteer coordinator Maree Thomson said Hidden Harvest is about promoting discussion on such an important topic.
"We give people the tools and the forks to tackle food waste and help shape a sustainable food future. We hope that through pop-up events such as this we can raise awareness about the amount of perfectly good food that gets wasted, and empower individuals to make positive changes to their food habits".
During the weekend festival at Stuart Park the Hidden Harvest team is be hosting interactive games and activities surrounding food waste and serving toast and homemade chutney made entirely from surplus produce.
Hidden Harvest founder Berbel Franse said the annual festival with major drawcard artists such as Angie McMahon, Golden Features, Hot Dub Time Machine provides an opportunity to connect with people and further spread their optimistic waste-wise message.
"The Yours and Owls Festival weekend is the perfect chance for us to positively educate young members of the local community about their food habits," she said.
