I know it's tough for parents these days to find healthy snacks that don't contain nuts or eggs, or are heavily processed with copious amounts of additives and preservatives.
My mission is to help other parents nourish their cherubs with good wholesome ingredients, easily and affordably, so I am always up for sharing any new recipes I come across or create using wholefood ingredients that have been tried and tested on my kids and kids around the neighbourhood.
In doing so, I hope to make the daily lunchbox challenge a little more achievable for us parents.
So on this note, I want to share with you this super scrummy alternative to packet sesame seed squares for a delicious and nutritious mid-morning snack for their school lunches.
The combination of seeds, coconut and honey keeps them going for ages and keeps their blood sugars stable meaning they can maximise their learning in the classroom without being “hangry” or “hyperactive”.
Makes 8-10
1/2 cup sesame seeds
1/3 cup honey
2 tbsp sunflower seeds
2 tbsp tahini
1/2 cup group sunflower seeds
1/8 tspn salt
1/4 cup currents
1/2 cup unsweetened coconut, plus garnish
1 tspn vanilla extract
Method:
Grind sunflower seeds in a blender to make a fine powder.
Then add all other ingredients and combine until mixture sticks together.
Rolls into small bite sized balls and roll in coconut.
Pop in an airtight container and store in the freezer, ready to bring out for school lunch boxes any day of the week.
