Savoury Turmeric Pancake
GF | DF | NF - Serves 1
Ingredients:
2 eggs, lightly beaten
1 tbsp psyllium husks (or ground flaxseed)
1/2 tsp ground turmeric
1/2 tsp ground paprika
Himalayan salt to taste
1 tsp coconut oil
Method:
In a mixing bowl combine all the ingredients (except the oil) and beat well.
Melt the oil in a medium sized pan over medium heat.
Pour the mixture into the pan and allow to cook. Wait for the edges to start to brown slightly and the mixture to bubble (the same as you would for normal pancakes) and then flip the pancake carefully to cook for another 1 minute on the other side.
Place the omelette on a plate and add your favourite sides. Aim to include some greens, fermented vege and avocado to the plate for a well rounded breakfast.
